Steps to make Festive thali:

  1. Let's start with raita...churn curd in a bowl,add finely chopped onion tomato cucumber,salt,pepper powder,jeera powder,chat masala and finely chopped coriander...ready.
  2. For potato mint biryani...parboil rice by adding garam Masala and salt..let it cool...now heat a pan..add ghee,shah jeera and green chilli ginger garlic paste and saute for few minutes..now add diced boiled potatoes and cook for few min..now add finely chopped mint leaves and salt,garam masala powder and mix well..off the gas...let it cool.now add churned curd....
  3. Now let's assemble...take a thick vessel..add 2 tsp ghee..spread one layer of rice..next layer of potato mint mixture and next layer of rice and then sprinkle Kesar milk and orange food colour and spread rice on it. Repeat the process of alternative rice,potato mint mixture,Kesar milk..finally close the lid and cook on slow flame for about 1 hr....
  4. For potato tomato curry..heat oil in a pan..add Rai jeera...once they crackle.add chopped tomatoes and cook for few min.now add green chilli Ginger garlic paste, turmeric,red chilli powder,garam masala,salt and boiled diced potato and one cup water and cook for 15 min...
  5. For onion bajiyas...take a vessel..mix slit onions,gram flour,rice flour,turmeric,green chilli paste,oil,salt and mix well...Now add eno and deep fry the small strands of onion bajiyas.
  6. For puris...Tie a dough of wheat flour,salt,oil and water to semi soft dough...Now roll small puris and fry.
